Like all Occitan cuisine, Aveyron’s cuisine is inspired by Spanish and Mediterranean gastronomy. Vegetables are abundant in the dishes, along with typical regional products such as black truffles and pink garlic from Lautrec. On the spot or to take away, you’ll find local black pudding, cod cassoulet, tasty cheeses (Roquefort, cabécou), desserts (croustade) and cookies (gimblette, poumpet, croquant des Cordes). The market is also an excellent opportunity to meet the locals.
